Mechanic: Levelling without transcending/ascending/descending?

Is it possible to 'refuse' to do any of these things, essentially staying stuck at T1?
Thought I'd ask before crashing...

You must choose to do those things so it is possible to become a level 30 mortal. You wouldn't be the first!

Ah, glad to hear it - and what a quick response, I'd even planned to let this one sit overnight!

Yup, you need to visit skill purchase page and manually "buy" a T2 class to become one, you can easily ignore that option and remain Mortal forever.
